A star-studded line-up of award-winning global chefs are turning up the heat on food sustainability at the inaugural Gulfood Top Table, launched at Gulfood 2022, the 27th edition of the world’s largest annual F&B sourcing event, which runs at Dubai World Trade Centre (DWTC) until Thursday. Michelin-starred chefs, celebrated culinary maestros, influencers, food journalists and trendsetters have joined forces to host a series of live demonstrations and masterclasses, with a focus on sustainability, local produce, and tackling food waste.
Gulfood Top Table is powered by leading enterprises such as Greener Crop, the UAE homegrown company that provides sustainable farm management solutions for local farms, providing technology-driven solutions, such as hydroponics, to be able to grow and harvest produce in the GCC.
Kicking off day one’s Top Table was Nick Alvis, Founder and Executive Chef of Folly, who walked the audience through a Folly signature, Roasted Saddle Lamb with whipped pine nuts and pine nut salsa.
“If we are not sustainable, we have no food life to use. It’s great to hear that the UAE has more fish farming and produce coming directly from local farms. It’s fantastic to see the massive rise in sustainability within the last two years, and we as chefs are trying to use as many locally sourced ingredients as we possibly can,” said Chef Alvis.
Luigi Vespero, the renowned Italian chef and F&B Director of Waldorf Astoria DIFC, held his Tortellini in Brodo Masterclass. “The dish I’ve created is a representation of sustainability and reducing food waste as every ingredient you buy is used in the dish with nothing going to waste. Gulfood brings together food lovers from around the world under one roof, showcasing the final product, producers, and the whole food supply chain. Top Table is the cherry on top of all the activations and is a great opportunity to bring the public together.”
The Gulfood Top Table is a first for the event and is taking culinary experiences to new heights with series of live demonstrations and workshops featuring up to 70 chefs from 50 restaurants preparing over 1,000 unique dishes, bringing together industry media, innovators, and global trendsetters in a masterclass feast.
